250 ml soy milk

160 g frozen mango (about 1 cup, thawed slightly)

40 g white chocolate chips (optional – ¼ cup, for topping)

Blend the base:
In a blender, combine mango, soy milk, yogurt, vanilla, and maple syrup (if using). Blend until smooth. -
Add chia seeds:
Pour the mixture into a medium bowl. Stir in the chia seeds until evenly distributed. Let it rest for 5 minutes, then stir again to break up any clumps. -
Set and chill:
Spoon the mixture into 4 small jars or containers.
Optional: Melt white chocolate and drizzle a thin layer over each jar for a dessert-style finish. -
Refrigerate:
Cover and refrigerate for at least 2 hours (or overnight), until thick and pudding-like.
