⏱ Prep Time

5 minutes (plus optional chill time)

πŸ“ Ingredients

  • 24g chia seeds (2 tbsp)

  • 60mL very hot water (¼ cup)

  • 180g plain or vanilla Greek yogurt (about ¾ cup)

  • 50g blueberries (about ⅓ cup), fresh or frozen

  • 5–10g honey or maple syrup (1–2 tsp), to taste (optional)

Optional toppings 🧁

  • Extra blueberries, to serve

  • Granola or toasted oats

  • 1 tbsp almond butter or other nut butter

  • Extra drizzle of honey or maple syrup

πŸ₯£ Method

  1. Make the chia gel

    • Add chia seeds to a small bowl.

    • Pour over the very hot water and stir well for about 30 seconds.

    • Set aside for 3–5 minutes, stirring once or twice, until it thickens into a gel.

  2. Blend the yogurt and berries

    • In a blender or with a stick blender, blend the Greek yogurt and blueberries until smooth and purple.

    • Taste and add honey or maple syrup if you’d like it sweeter.

  3. Combine

    • Scrape the blueberry yogurt mixture into the bowl with the chia gel.

    • Stir thoroughly until everything is evenly combined.

  4. Serve or chill

    • Spoon into a serving bowl or jar.

    • Add your favourite toppings and enjoy straight away — or refrigerate for 20–30 minutes (or overnight) for a thicker, more “pudding-like” texture.

πŸ’‘ Swaps & Add-ins

Fruit swaps πŸ“

  • Swap blueberries for raspberries, strawberries, blackberries, or a mixed berry blend.

  • For a tropical twist, use mango or pineapple instead (fresh or frozen).

Yogurt & milk swaps πŸ₯›

  • Use vanilla Greek yogurt for extra flavour.

  • Use natural yogurt + ½ tsp vanilla extract if you prefer it less sweet.

  • Dairy-free: use a thick coconut or almond yogurt and add 10–15mL extra water if it’s very thick.

Flavour boosters 🌟

  • ½ tsp vanilla extract for a vanilla–blueberry vibe.

  • A pinch of ground cinnamon or cardamom.

  • 1–2 tsp lemon juice + a little zest for a tangy “blueberry cheesecake” feel.

Extra nutrition 🧬

  • 10–15g ground flaxseed or LSA mixed into the yogurt blend.

  • 5–10g hemp seeds sprinkled on top.

  • 5–10g chopped nuts (almonds, walnuts, pecans) for crunch.

Texture tweaks ⚖️

  • Thicker: increase chia seeds to 30g (2½ tbsp) or chill overnight.

  • Looser: stir in 1–2 tbsp extra water or a splash of milk when combining.
